2 garlic cloves
1 can of artichoke hearts from ADRIA
3 sprigs thyme
40 g parmesan
40 g ground blanched almonds
50 ml olive oil
Freshly ground pepper
1 squeeze lemon
Peel and finely chop the garlic cloves. Drain the artichoke hearts, let them drain, put them in a tall container with the chopped garlic and puree them with a hand blender to a creamy mass.
Wash the thyme sprigs, pat dry and pluck the leaves. Grate the Parmesan and fold into the mixture with the ground almonds and thyme leaves.
Add olive oil, season with salt, freshly ground pepper and a squeeze of lemon. Mix everything again with a stabilizer.
Goes great with bread, pasta or potatoes.
