Mit Chili zum Nobelpreis: Die Erforschung der Empfindlichkeit f\u00fcr Sch\u00e4rfe beim Menschen hat j\u00fcngst zur Verleihung des Medizin-Nobelpreises gef\u00fchrt. Wie reagieren Nervenzellen auf Hitze und Druck? Das fanden die beiden US-Forscher David Julius und Ardem Patapoutian heraus. Sie erhielten daf\u00fcr den Medizin-Nobelpreis 2021. Der Stoff in der Chilischote \u2013 das Capsaicin \u2013 erm\u00f6glichte ihnen die Entdeckung eines der wichtigsten Schmerzrezeptoren des K\u00f6rpers. Einer der beiden Forscher nutzte Capsaicin, das ein brennendes Gef\u00fchl hervorruft, um einen Sensor in den Nervenenden der Haut zu identifizieren, der auf Hitze reagiert. Was hat das mit Paul M. M\u00fcller zu tun?<\/p>\n

Nun, wir haben auch \u201escharfe Sachen\u201c im Programm: Wie zum Beispiel diese Jalapenos oder Peperoni. Und die sind k\u00f6stlich als w\u00fcrzige Beigaben in der K\u00fcche f\u00fcr unterschiedliche Gerichte, aber eben auch von einer gewissen Sch\u00e4rfe. Beide Produkte enthalten Capsaicin.<\/p>\n

Der Hintergrund: Die Sch\u00e4rfe eines Lebensmittels, also die Sch\u00e4rfe des Geschmacks, wird in Scoville angegeben: Diese Ma\u00dfeinheit gibt Auskunft dar\u00fcber, wie scharf ein Nahrungsmittel ist und bestimmt den Capsaicin-Gehalt des Produkts. Capsaicin geh\u00f6rt zur chemischen Gruppe der Alkaloide (organische stickstoffhaltige chem. Verbindungen) und wird aus dem Nachtschattengew\u00e4chs Capsicum (Paprikasorte) gewonnen. Es z\u00e4hlt zu den sch\u00e4rfsten Substanzen auf der Erde. Also: Je h\u00f6her der Capsaicin-Gehalt, desto sch\u00e4rfer die Schote! Das Messverfahren nach Scoville wird mit SHU (Scoville Heat Units) abgek\u00fcrzt und bezeichnet die feststellbare Sch\u00e4rfe durch die Berechnung des reinen Capsaicin-Gehalts im jeweiligen Produkt. Bis zum Jahr 2000 wurde der H\u00f6chstwert mit 16.000.000 Scoville definiert. So hat z.B. die einfache Gartenpaprika ohne feststellbare Sch\u00e4rfe den Scoville-Grad 0. Mittlerweile jedoch reicht die Scoville-Skala von 0 bis 25.000.000 \u2013 dem Sch\u00e4rfegrad von purem Capsaicin.<\/p>\n

Zur Orientierung: Menschen nehmen ab einem Scoville-Grad von 16 SHU eine leichte Sch\u00e4rfe wahr. Bestimmte Peperoni-Sorten wie Santa Fe Chili weisen einen Wert zwischen 100 und 500 SHU auf. Das ist abh\u00e4ngig von Erntezeit, Reifegrad und Sonneneinstrahlung. Tabascosauce kommt meist auf 1000 bis 2500 SHU, Jalapeno-Chili haben einen Scoville-Wert zwischen 2500 und 10.000 SHU. Aber auch hier gibt es mildere und sch\u00e4rfere Versionen. Paul M.
